This very simple recipe for pickled pepper relish is great for any type of food you can prepare on the grill. Add that extra pizzazz to your steaks, chicken, burgers, brats, fish, mushrooms. Serve it at your brunch table to scoop with eggs and toast. Swirl it into soups and stews. Really, anything goes!
You can use any type of pepper or a combination of different kinds. Just be sure to chop them up in consistent chunks and remember that not all peppers start out with the same thickness.

Ingredients
1 cup peppers, evenly chopped (combination of spicy and mild is best)
¼ cup white wine vinegar
Less than ¼ cup sugar
¾ cup garlic, chopped
1 small onion, chopped
¾ teaspoon yellow mustard seed
Salt to taste
Instructions
Add all ingredients to a large pan and heat over medium. Stir until the sugar dissolves. Bring to a light boil.
Reduce heat to low and simmer 25-30 minutes until liquid is absorbed into the mixture.
Add to a jar, allow to cool and serve.
